Falukorv with Mashed Potatoes and Lingonberry Sauce

- 1 pound, sliced into 1/2-inch thick rounds Falukorv
- 4 tablespoons, divided Butter

- 2 pounds, peeled and diced Potatoes
- 1/2 cup, for serving Lingonberry sauce

Instructions
- Begin by slicing the falukorv into 1/2-inch thick rounds.
- In a large skillet, heat 2 tablespoons of butter over medium heat. Once melted, add the sliced falukorv.
- Cook the falukorv for about 5 minutes on each side, or until it is beautifully browned and heated through.
- While the falukorv is cooking, bring a large pot of salted water to a boil. Carefully add the diced potatoes and cook until tender, approximately 10 minutes.
- Drain the potatoes and return them to the pot. Add the remaining 2 tablespoons of butter, salt, and pepper to taste. Mash the potatoes until they are smooth and creamy.
- Once the falukorv is ready, serve it alongside the mashed potatoes, with a generous spoonful of lingonberry sauce on the side.
