- 4 cups, diced Country potatoes

- 1 medium, diced Bell pepper
- 2 cloves, minced Garlic
- 1 cup, cooked and crumbled Breakfast sausage or bacon
- 4 large Eggs
- 1 cup, shredded Cheddar cheese
- 2, sliced Green onions

Instructions
- In a large skillet, heat the olive oil over medium heat.
- Add the diced country potatoes to the skillet, spreading them out in an even layer. Cook for about 10 minutes, stirring occasionally, until they are golden brown and crispy.
- Add the diced onion, bell pepper, and minced garlic to the skillet. Sauté for an additional 5 minutes, or until the vegetables are softened and fragrant.

- Using a spoon, make four wells in the potato mixture. Crack an egg into each well, being careful not to break the yolks.
