Ingredients

Olive oil
2 tablespoons
Country potatoes
4 cups, diced
Onion
1 medium, diced
Bell pepper
1 medium, diced
Garlic
2 cloves, minced
Breakfast sausage or bacon
1 cup, cooked and crumbled
Eggs
4 large
Cheddar cheese
1 cup, shredded
Green onions
2, sliced
Salt
to taste
Pepper
to taste

Instructions

  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the diced country potatoes to the skillet, spreading them out in an even layer. Cook for about 10 minutes, stirring occasionally, until they are golden brown and crispy.
  3. Add the diced onion, bell pepper, and minced garlic to the skillet. Sauté for an additional 5 minutes, or until the vegetables are softened and fragrant.
  4. Stir in the cooked breakfast meat and mix well to combine with the potato and vegetable mixture.
  5. Using a spoon, make four wells in the potato mixture. Crack an egg into each well, being careful not to break the yolks.
  6. Cover the skillet with a lid and cook for about 5 minutes, or until the eggs are set to your desired doneness.
  7. Sprinkle the shredded cheddar cheese over the top of the skillet, cover again, and let it melt for about 2 minutes.
  8. Season with salt and pepper to taste. Garnish with sliced green onions before serving.
