
Farmhouse Breakfast Skillet with Country Potatoes

Ingredients
- Green onions (2, sliced for garnish)
- Salt and pepper (to taste)
- Cheddar cheese (1 cup, shredded)
- Eggs (4)
- Breakfast sausage or bacon (1 cup, cooked and crumbled)
- Garlic (2 cloves, minced)
- Bell pepper (1, diced)
- Onion (1 medium, diced)
- Olive oil (2 tablespoons)
- Country potatoes (2 cups, diced)
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the country potatoes and cook until golden brown and crispy, about 10 minutes.
- Add the onion, bell pepper, and garlic to the skillet and cook until the vegetables are soft, about 5 minutes.
- Add the cooked breakfast meat to the skillet and stir to combine.
- Make four wells in the potato mixture and crack an egg into each well.
- Cover the skillet and cook until the eggs are set, about 5 minutes.
- Sprinkle the shredded cheese over the top of the skillet and cover again until the cheese is melted, about 2 minutes.
- Season with salt and pepper to taste and garnish with sliced green onions before serving.
