Ingredients
- Olive oil
- 2 tablespoons
- Country potatoes
- 4 cups, diced
- Onion
- 1 medium, diced
- Bell pepper
- 1 medium, diced
- Garlic
- 2 cloves, minced
- Breakfast sausage or bacon
- 1 cup, cooked and crumbled
- Eggs
- 4 large
- Cheddar cheese
- 1 cup, shredded
- Green onions
- 2, sliced
- Salt

- Pepper
- to taste
Instructions
- In a large skillet, heat the olive oil over medium heat.
- Add the diced country potatoes to the skillet, spreading them out in an even layer. Cook for about 10 minutes, stirring occasionally, until they are golden brown and crispy.
- Add the diced onion, bell pepper, and minced garlic to the skillet. Sauté for an additional 5 minutes, or until the vegetables are softened and fragrant.
- Stir in the cooked breakfast meat and mix well to combine with the potato and vegetable mixture.
- Using a spoon, make four wells in the potato mixture. Crack an egg into each well, being careful not to break the yolks.
- Cover the skillet with a lid and cook for about 5 minutes, or until the eggs are set to your desired doneness.
- Sprinkle the shredded cheddar cheese over the top of the skillet, cover again, and let it melt for about 2 minutes.
- Season with salt and pepper to taste. Garnish with sliced green onions before serving.
