Farmstand Gazpacho

A refreshing and healthy cold soup, perfect for hot summer days. This gazpacho is packed with fresh farmstand vegetables.

Ingredients

  • Salt and pepper (to taste)
  • Red wine vinegar (1 tablespoon)
  • Extra virgin olive oil (2 tablespoons)
  • Garlic (2 cloves)
  • Red onion (1 small)
  • Bell pepper (1, seeded)
  • Cucumber (1 medium, peeled and seeded)
  • Tomatoes (4 large, ripe)

Instructions

  1. Chop the tomatoes, cucumber, bell pepper, and onion into 1-inch chunks.
  2. Put each vegetable separately into a food processor fitted with a steel blade and pulse until it is coarsely chopped. Do not overprocess!
  3. After each vegetable is processed, combine them in a large bowl and add the garlic, oil, vinegar, salt, and pepper.
  4. Mix well and chill before serving. The longer gazpacho sits, the more the flavors develop.
