Fattah

Ingredients
- 4 large, cut into pieces and toasted Pita bread
- 2 cups Cooked rice
- 1 pound, cubed Lamb or beef
- 1 large, chopped Onion
- 3 cloves, minced Garlic
- 1 teaspoon Ground cumin
- 1 teaspoon Ground coriander
- 1/2 teaspoon Ground cinnamon

- 1/4 cup, chopped (for garnish) Fresh parsley
- 1/4 cup (for garnish) Pine nuts
- 2 tablespoons Butter
- 1 cup Yogurt

Instructions
- In a large skillet, heat 2 tablespoons of oil over medium heat. Add the chopped onion and minced garlic, sautéing until they turn golden brown and fragrant, about 5 minutes.
- Add the cubed lamb or beef to the skillet, browning on all sides. Season with ground cumin, coriander, cinnamon, salt, and pepper. Cook for about 10-15 minutes until the meat is cooked through and tender.
- While the meat is cooking, prepare the rice according to package instructions, ensuring it’s fluffy and well-cooked.
- In a small bowl, whisk together the yogurt and lemon juice until smooth. Set aside for serving.
- In a serving dish, layer the toasted pita bread pieces at the bottom, followed by a generous layer of cooked rice, and then the cooked meat mixture.
- Pour the yogurt sauce evenly over the layered ingredients, allowing it to soak slightly into the bread.
- In a small saucepan, melt the butter over medium heat. Add the pine nuts and toast until golden brown, stirring frequently to prevent burning. Remove from heat.
- Sprinkle the toasted pine nuts and chopped parsley over the top of the dish for an added crunch and freshness.
