Fattah is a beloved traditional Middle Eastern dish, celebrated for its harmonious layers of crispy toasted pita bread, fluffy rice, and tender meat, all crowned with a tangy yogurt sauce. This dish offers a perfect balance of flavors and textures, making it a feast for both the eyes and the palate. Originating from the Levant region, Fattah is often served during festive occasions and gatherings, symbolizing hospitality and abundance.

Ingredients

Pita bread
4 large, cut into pieces and toasted
Cooked rice
2 cups
Lamb or beef
1 pound, cubed
Onion
1 large, chopped
Garlic
3 cloves, minced
Ground cumin
1 teaspoon
Ground coriander
1 teaspoon
Ground cinnamon
1/2 teaspoon
Salt
to taste
Pepper
to taste
Fresh parsley
1/4 cup, chopped (for garnish)
Pine nuts
1/4 cup (for garnish)
Butter
2 tablespoons
Yogurt
1 cup
Lemon juice
2 tablespoons

Instructions

  1. In a large skillet, heat 2 tablespoons of oil over medium heat. Add the chopped onion and minced garlic, sautéing until they turn golden brown and fragrant, about 5 minutes.
  2. Add the cubed lamb or beef to the skillet, browning on all sides. Season with ground cumin, coriander, cinnamon, salt, and pepper. Cook for about 10-15 minutes until the meat is cooked through and tender.
  3. While the meat is cooking, prepare the rice according to package instructions, ensuring it’s fluffy and well-cooked.
  4. In a small bowl, whisk together the yogurt and lemon juice until smooth. Set aside for serving.
  5. In a serving dish, layer the toasted pita bread pieces at the bottom, followed by a generous layer of cooked rice, and then the cooked meat mixture.
  6. Pour the yogurt sauce evenly over the layered ingredients, allowing it to soak slightly into the bread.
  7. In a small saucepan, melt the butter over medium heat. Add the pine nuts and toast until golden brown, stirring frequently to prevent burning. Remove from heat.
  8. Sprinkle the toasted pine nuts and chopped parsley over the top of the dish for an added crunch and freshness.
