Instructions
- Bring a pot of salted water to a boil. Add the fava beans and cook for 2-3 minutes until tender. Drain and rinse with cold water to cool.
- Carefully remove the outer skin from the fava beans by gently squeezing them. This step enhances the texture and flavor of the beans. Set the shelled fava beans aside.
- In a large mixing bowl, combine the shelled fava beans, artichoke hearts, halved cherry tomatoes, finely chopped red onion, and chopped parsley.
- In a smaller bowl, whisk together the lemon juice, extra virgin olive oil, minced garlic, salt, and pepper until well combined. Adjust seasoning to taste.
- Pour the lemon dressing over the salad mixture and toss gently to ensure all ingredients are well coated.
- For optimal flavor, cover the salad and refrigerate for at least 30 minutes, allowing the ingredients to meld together.
- Serve chilled as a refreshing side dish or light lunch. Enjoy the burst of flavors!
Tips
- For added protein, consider tossing in some crumbled feta cheese or grilled chicken.
- If fava beans are unavailable, green peas or edamame can be excellent substitutes.
