- Fava beans
- 2 cups, shelled

- Cherry tomatoes

- Red onion
- 1/2, finely chopped
- Fresh parsley
- 1/4 cup, chopped
- Garlic
- 2 cloves, minced
- Extra virgin olive oil
- 1/4 cup
- Lemon juice
- 3 tablespoons, freshly squeezed
- Salt

Instructions
- Bring a pot of salted water to a boil. Add the fava beans and cook for 2-3 minutes until tender. Drain and rinse with cold water to cool.
- Carefully remove the outer skin from the fava beans by gently squeezing them. This step enhances the texture and flavor of the beans. Set the shelled fava beans aside.
- In a large mixing bowl, combine the shelled fava beans, artichoke hearts, halved cherry tomatoes, finely chopped red onion, and chopped parsley.
