
Fava Bean and Artichoke Salad
This refreshing salad combines fava beans, artichokes, and a tangy lemon dressing.
Ingredients
- Salt and pepper (to taste)
- Garlic (1 clove, minced)
- Extra virgin olive oil (2 tablespoons)
- Lemon juice (2 tablespoons)
- Fresh parsley (1/4 cup, chopped)
- Red onion (1/4 cup, thinly sliced)
- Cherry tomatoes (1 cup, halved)
- Artichoke hearts (1 cup, quartered)
- Fava beans (2 cups, shelled)
Instructions
- Bring a pot of salted water to a boil. Add the fava beans and cook for 2-3 minutes. Drain and rinse with cold water.
- Remove the outer skin from the fava beans by gently squeezing them. Set aside.
- In a large bowl, combine the fava beans, artichoke hearts, cherry tomatoes, red onion, and parsley.
- In a small bowl, whisk together the lemon juice, olive oil, garlic, salt, and pepper.
- Pour the dressing over the salad and toss to combine.
- Refrigerate for at least 30 minutes to allow the flavors to meld.
- Serve chilled and enjoy!
