Servings: 4

Ingredients

Fava beans
2 cups, shelled
Artichoke hearts
1 can (14 oz) or 1 cup fresh, chopped
Cherry tomatoes
1 cup, halved
Red onion
1/2, finely chopped
Fresh parsley
1/4 cup, chopped
Garlic
2 cloves, minced
Extra virgin olive oil
1/4 cup
Lemon juice
3 tablespoons, freshly squeezed
Salt
to taste
Pepper
to taste

Instructions

  1. Bring a pot of salted water to a boil. Add the fava beans and cook for 2-3 minutes until tender. Drain and rinse with cold water to cool.
  2. Carefully remove the outer skin from the fava beans by gently squeezing them. This step enhances the texture and flavor of the beans. Set the shelled fava beans aside.
  3. In a large mixing bowl, combine the shelled fava beans, artichoke hearts, halved cherry tomatoes, finely chopped red onion, and chopped parsley.
  4. In a smaller bowl, whisk together the lemon juice, extra virgin olive oil, minced garlic, salt, and pepper until well combined. Adjust seasoning to taste.
  5. Pour the lemon dressing over the salad mixture and toss gently to ensure all ingredients are well coated.
  6. For optimal flavor, cover the salad and refrigerate for at least 30 minutes, allowing the ingredients to meld together.
  7. Serve chilled as a refreshing side dish or light lunch. Enjoy the burst of flavors!
