Fava Bean and Basil Salad

Fava beans
2 cups, shelled
Cherry tomatoes
1 cup, halved
Red onion
1 small, finely chopped
Fresh basil leaves
1 cup, roughly chopped
Extra virgin olive oil
3 tablespoons
Lemon juice
2 tablespoons, freshly squeezed
Salt
to taste
Black pepper
to taste

Instructions

  1. Bring a pot of salted water to a boil. Add the fava beans and cook for 2-3 minutes, until tender. Drain and rinse under cold water to stop the cooking process.
