Ingredients
- Fava beans
- 2 cups, shelled
- Cherry tomatoes
- 1 cup, halved
- Red onion
- 1 small, finely chopped
- Fresh basil leaves
- 1 cup, roughly chopped
- Extra virgin olive oil
- 3 tablespoons
- Lemon juice
- 2 tablespoons, freshly squeezed
- Salt

Instructions
- Bring a pot of salted water to a boil. Add the fava beans and cook for 2-3 minutes, until tender. Drain and rinse under cold water to stop the cooking process.
- Once cooled, gently squeeze each fava bean to remove the outer skin. Discard the skins to reveal the bright green beans inside.
- In a large mixing bowl, combine the shelled fava beans, halved cherry tomatoes, finely chopped red onion, and roughly chopped fresh basil leaves.
- In a separate small bowl, whisk together the lemon juice, extra virgin olive oil, salt, and black pepper until well combined.
- Pour the dressing over the salad and toss gently to coat all ingredients evenly.
- Let the salad sit for at least 10 minutes before serving to allow the flavors to meld. Serve chilled or at room temperature.
