Ingredients
- Baguette
- 1, sliced into 1/2-inch thick slices
- Extra virgin olive oil
- 3 tablespoons, divided
- Salt

- Black pepper

- Fresh fava beans
- 1 cup, shelled
- Burrata cheese
- 8 ounces, at room temperature
- Fresh basil
- 1/4 cup, chopped
- Lemon juice
- 1 tablespoon, freshly squeezed
Instructions
- Preheat the oven to 375°F (190°C).
- Slice the baguette into 1/2-inch thick slices and arrange them on a baking sheet.
- Brush both sides of the baguette slices with 2 tablespoons of extra virgin olive oil.
- Bake for 8-10 minutes, or until the crostini are golden brown and crispy, flipping halfway through for even toasting.
- While the crostini are baking, bring a pot of salted water to a boil. Blanch the fava beans for 2 minutes, then drain and rinse with cold water to halt the cooking process.
- Once cooled, gently remove the outer skins from the fava beans to reveal the tender green beans inside.
- In a bowl, combine the blanched fava beans, lemon juice, chopped basil, salt, and pepper. Toss gently to mix.
- Spread a generous amount of burrata cheese on each toasted crostini.
- Top each crostini with the fava bean mixture, ensuring an even distribution.
- Drizzle with the remaining 1 tablespoon of extra virgin olive oil and sprinkle with additional salt and pepper to taste.
