Ingredients

Baguette
1, sliced into 1/2-inch thick slices
Extra virgin olive oil
3 tablespoons, divided
Salt
to taste, plus a pinch for blanching
Black pepper
to taste
Fresh fava beans
1 cup, shelled
Burrata cheese
8 ounces, at room temperature
Fresh basil
1/4 cup, chopped
Lemon juice
1 tablespoon, freshly squeezed

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice the baguette into 1/2-inch thick slices and arrange them on a baking sheet.
  3. Brush both sides of the baguette slices with 2 tablespoons of extra virgin olive oil.
  4. Bake for 8-10 minutes, or until the crostini are golden brown and crispy, flipping halfway through for even toasting.
  5. While the crostini are baking, bring a pot of salted water to a boil. Blanch the fava beans for 2 minutes, then drain and rinse with cold water to halt the cooking process.
