Instructions
- In a large pot, heat olive oil over medium heat. Add the sliced chorizo sausage and cook until browned, about 5-7 minutes. Remove from the pot and set aside, leaving the drippings in the pot.
- In the same pot, add the chopped onion and minced garlic. Sauté until the onion is translucent, about 3-4 minutes.
- Add the diced red bell pepper and cook for an additional 2 minutes until softened.
- Stir in the shelled fava beans, diced tomatoes (with juices), chicken broth, paprika, cumin, salt, and pepper. Mix well to combine all ingredients.
