Ingredients

Fava beans
2 cups, shelled
Garlic
2 cloves, minced
Fresh lemon juice
3 tablespoons
Extra virgin olive oil

Fresh parsley
1/4 cup, chopped
Fresh mint
1/4 cup, chopped
Salt
1/2 teaspoon (to taste)
Black pepper
1/4 teaspoon (to taste)

Instructions

  1. Bring a pot of water to a boil and blanch the fava beans for 2 minutes. Drain and rinse with cold water to stop the cooking process.
  2. Once cooled, gently squeeze each fava bean to remove the outer skin, revealing the tender inner bean. Discard the skins.
  3. In a food processor, combine the shelled fava beans, minced garlic, fresh lemon juice, and olive oil. Add the chopped parsley, mint, salt, and black pepper.
  4. Blend until smooth and creamy, adding more olive oil as needed to achieve your desired consistency.
