Instructions
- Bring a pot of water to a boil. Add the fava beans and blanch for 2 minutes to brighten their color and soften them slightly.
- Drain the fava beans and rinse them under cold water to stop the cooking process. Once cooled, gently remove the outer skins from the beans.
- In a food processor, combine the peeled fava beans, minced garlic, lemon juice, 2 tablespoons of olive oil, salt, and pepper. Process until the mixture is smooth and creamy, adjusting seasoning as needed.
- Preheat your oven to 350°F (175°C).
- Arrange the baguette slices on a baking sheet and brush each slice lightly with the remaining tablespoon of olive oil. Toast in the oven for about 5-7 minutes, or until they are golden and crisp.
- Once the baguette slices are done, spread a generous layer of the fava bean mixture on each toast.
- Top each crostini with a slice of smoked salmon, allowing the richness of the salmon to complement the creamy fava bean spread.
- Finish with a sprinkle of fresh dill on top for an aromatic touch.
- Serve immediately and enjoy these delightful bites!
Tips
- For an added crunch, consider garnishing with thinly sliced radishes or capers.
- You can replace fava beans with another legume such as chickpeas for a different flavor profile.
- If you want a bit of heat, add a pinch of red pepper flakes to the fava bean spread.
