Fava Bean and Smoked Salmon Crostini

Indulge in a delightful blend of flavors with these elegant crostini that showcase a creamy fava bean spread topped with luscious smoked salmon. The perfect appetizer for entertaining, these bites combine the fresh aroma of dill and zesty lemon, all on a crispy baguette base. Historically, crostini originated in Italy, where they were often served as a simple snack or appetizer, showcasing fresh ingredients and local flavors. This modern twist pays homage to that tradition while adding a touch of sophistication.

Serves 12

Ingredients

Fresh dill
2 tablespoons, chopped
Smoked salmon
8 ounces, sliced
Baguette
1, sliced into 1/2 inch rounds
Salt
to taste
Black pepper
to taste
Olive oil
3 tablespoons, divided
Lemon juice
1 tablespoon
Garlic
2 cloves, minced
Fava beans
2 cups, shelled

Instructions

  1. Bring a pot of water to a boil. Add the fava beans and blanch for 2 minutes to brighten their color and soften them slightly.
  2. Drain the fava beans and rinse them under cold water to stop the cooking process. Once cooled, gently remove the outer skins from the beans.
  3. In a food processor, combine the peeled fava beans, minced garlic, lemon juice, 2 tablespoons of olive oil, salt, and pepper. Process until the mixture is smooth and creamy, adjusting seasoning as needed.
  4. Preheat your oven to 350°F (175°C).
  5. Arrange the baguette slices on a baking sheet and brush each slice lightly with the remaining tablespoon of olive oil. Toast in the oven for about 5-7 minutes, or until they are golden and crisp.
  6. Once the baguette slices are done, spread a generous layer of the fava bean mixture on each toast.
  7. Top each crostini with a slice of smoked salmon, allowing the richness of the salmon to complement the creamy fava bean spread.
  8. Finish with a sprinkle of fresh dill on top for an aromatic touch.
  9. Serve immediately and enjoy these delightful bites!

Tips

  • 💡 For an added crunch, consider garnishing with thinly sliced radishes or capers.
  • 💡 You can replace fava beans with another legume such as chickpeas for a different flavor profile.
  • 💡 If you want a bit of heat, add a pinch of red pepper flakes to the fava bean spread.
