
Fava Bean and Steak Salad

Ingredients
- Salt and pepper (to taste)
- Dijon mustard (1 teaspoon)

- Lemon juice (2 tablespoons)
- Fresh mint leaves (1/4 cup, chopped)
- Feta cheese (1/4 cup, crumbled)
- Red onion (1/4 cup, thinly sliced)
- Cherry tomatoes (1 cup, halved)
- Mixed greens (4 cups)
- Fava beans (1 cup, shelled)
- Steak (8 oz)
Instructions
- Season the steak with salt and pepper. Heat a grill or grill pan over medium-high heat and cook the steak to your desired doneness. Let it rest for 5 minutes, then slice it thinly.
- In a large bowl, combine the fava beans, mixed greens, cherry tomatoes, red onion, feta cheese, and mint leaves.
