Ingredients
- Steak (1 pound, cut into steaks)
- Salt (to taste)
- Black pepper (to taste)
- Olive oil (3 tablespoons, divided)
- Dijon mustard (1 tablespoon)
- Lemon juice (2 tablespoons)
- Fresh mint leaves (1/4 cup, chopped)
- Feta cheese (1/2 cup, crumbled)
- Red onion (1/2, thinly sliced)

- In a large mixing bowl, combine the fava beans, mixed greens, halved cherry tomatoes, thinly sliced red onion, crumbled feta cheese, and chopped mint leaves.
- In a separate small bowl, whisk together the lemon juice, 2 tablespoons of olive oil, Dijon mustard, and additional salt and pepper to taste to create a flavorful vinaigrette.
- Drizzle the vinaigrette over the salad and toss gently to coat all ingredients evenly.
- To serve, divide the salad mixture onto plates and top with the freshly sliced steak. Drizzle with the remaining tablespoon of olive oil if desired.
- Enjoy immediately while the steak is warm and the flavors are fresh!
