Mediterranean Fava Bean and Sun-Dried Tomato Salad

Ingredients
- Salt
- 1/2 teaspoon, or to taste
- Black pepper
- 1/4 teaspoon, or to taste
- Garlic
- 1 clove, minced
- Extra virgin olive oil
- 1/4 cup
- Lemon juice
- 2 tablespoons, freshly squeezed
- Fresh parsley
- 1/4 cup, finely chopped
- Red onion
- 1/2 cup, thinly sliced
- Sun-dried tomatoes
- 1/2 cup, chopped
- Fava beans
- 2 cups, shelled
Instructions
- Fill a medium-sized pot with water, add a pinch of salt, and bring to a boil.
- Add the shelled fava beans to the boiling water and cook for 2-3 minutes until they become tender. Be careful not to overcook them.
- Drain the fava beans and rinse them under cold water to stop the cooking process.
- Peel and discard the outer skin of the fava beans by gently squeezing them.
- In a large bowl, combine the peeled fava beans, chopped sun-dried tomatoes, thinly sliced red onion, and finely chopped parsley.
- Prepare the dressing by whisking together the minced garlic, extra virgin olive oil, freshly squeezed lemon juice, salt, and black pepper in a small bowl.
- Pour the zesty lemon dressing over the salad and toss gently until all the ingredients are well coated.
- Allow the salad to marinate for at least 10 minutes in the refrigerator. This step will help the flavors to meld together.
