Ingredients

Salt
1/2 teaspoon, or to taste
Black pepper
1/4 teaspoon, or to taste
Garlic
1 clove, minced
Extra virgin olive oil
1/4 cup
Lemon juice
2 tablespoons, freshly squeezed
Fresh parsley
1/4 cup, finely chopped
Red onion
1/2 cup, thinly sliced
Sun-dried tomatoes
1/2 cup, chopped
Fava beans
2 cups, shelled

Instructions

  1. Fill a medium-sized pot with water, add a pinch of salt, and bring to a boil.
  2. Add the shelled fava beans to the boiling water and cook for 2-3 minutes until they become tender. Be careful not to overcook them.
  3. Drain the fava beans and rinse them under cold water to stop the cooking process.
  4. Peel and discard the outer skin of the fava beans by gently squeezing them.
  5. In a large bowl, combine the peeled fava beans, chopped sun-dried tomatoes, thinly sliced red onion, and finely chopped parsley.
  6. Prepare the dressing by whisking together the minced garlic, extra virgin olive oil, freshly squeezed lemon juice, salt, and black pepper in a small bowl.
  7. Pour the zesty lemon dressing over the salad and toss gently until all the ingredients are well coated.
  8. Allow the salad to marinate for at least 10 minutes in the refrigerator. This step will help the flavors to meld together.
