Fava Bean and Tomato Bruschetta

Ingredients
- Baguette
- 1, cut into 1/2 inch slices
- Salt and pepper

- Balsamic vinegar
- 1 tablespoon
- Extra virgin olive oil
- 3 tablespoons, divided
- Fresh basil
- 1/4 cup, finely chopped
- Garlic
- 2 cloves, minced
- Tomatoes
- 2 large, diced
- Fava beans
- 1 cup, shelled
Instructions
- In a large pot, bring water to a boil. Add the fava beans and blanch for 2 minutes, then drain and rinse with cold water to stop them from overcooking.
- Gently squeeze the fava beans to remove their outer skin. Set them aside.
- In a bowl, combine the diced tomatoes, minced garlic, chopped basil, 2 tablespoons of olive oil, balsamic vinegar, salt, and pepper. Stir well to combine.
- Add the shelled and peeled fava beans to the tomato mixture and toss until well combined.
- Preheat your oven to 400°F (200°C).
- Arrange the baguette slices on a baking sheet and brush each with the remaining tablespoon of olive oil. Toast them in the oven for 5-7 minutes, or until they reach a beautiful golden brown color.
- Let the toasted baguette slices cool slightly, then top each with an ample amount of the fava bean and tomato mixture.
- Serve immediately while the bread is still warm and enjoy this classic Italian delight!
Tips
- For an extra layer of flavor, rub a cut clove of garlic on the toasted baguette slices before topping them.
