Ingredients

- Black pepper (1/4 teaspoon, or to taste)
- Extra virgin olive oil (3 tablespoons)
- Lemon juice (2 tablespoons, freshly squeezed)
- Fresh mint (1/4 cup, finely chopped)
- Fresh parsley (1/4 cup, finely chopped)
- Red onion (1 medium, finely diced)
- Tomatoes (2 medium, diced)
- Fava beans (2 cups, shelled)
Instructions
- Bring a large pot of salted water to a rolling boil. Add the shelled fava beans and blanch for 2-3 minutes, or until they become tender and vibrant green.
- Drain the fava beans and immediately rinse them under cold water to stop the cooking process. This also makes it easier to remove the tough outer skin. Simply pinch one end and squeeze to pop out the bright green bean.
- In a large mixing bowl, combine the blanched fava beans, diced tomatoes, finely diced red onion, chopped fresh parsley, and mint. Toss well to combine.
- Prepare the dressing: In a small bowl, whisk together the freshly squeezed lemon juice, extra virgin olive oil, salt, and pepper until well combined.
