Bursting with the vibrant flavors of fresh fava beans, juicy ripe tomatoes and a medley of aromatic herbs, this salad is a celebration of natural freshness. Infused with a tangy lemon dressing, it's a refreshing dish that's perfect for a light lunch, a picnic, or as a delightful side dish. Ingredients

Salt
1/2 teaspoon, or to taste
Black pepper
1/4 teaspoon, or to taste
Extra virgin olive oil
3 tablespoons
Lemon juice
2 tablespoons, freshly squeezed
Fresh mint
1/4 cup, finely chopped
Fresh parsley
1/4 cup, finely chopped
Red onion
1 medium, finely diced
Tomatoes
2 medium, diced
Fava beans
2 cups, shelled

Instructions

  1. Bring a large pot of salted water to a rolling boil. Add the shelled fava beans and blanch for 2-3 minutes, or until they become tender and vibrant green.
  2. Drain the fava beans and immediately rinse them under cold water to stop the cooking process. This also makes it easier to remove the tough outer skin. Simply pinch one end and squeeze to pop out the bright green bean.
  3. In a large mixing bowl, combine the blanched fava beans, diced tomatoes, finely diced red onion, chopped fresh parsley, and mint. Toss well to combine.
  4. Prepare the dressing: In a small bowl, whisk together the freshly squeezed lemon juice, extra virgin olive oil, salt, and pepper until well combined.
  5. Drizzle the dressing over the salad mixture. Toss well to ensure all ingredients are evenly coated.
  6. Allow the salad to rest for at least 10 minutes before serving. This allows the flavors to meld together beautifully. For best results, you can refrigerate the salad during this time to serve it chilled.
