Ingredients

Fava beans
2 cups, shelled
Canned tuna
1 can (5 oz), drained
Garlic
2 cloves, minced
Fresh parsley
1/4 cup, chopped
Fresh mint
1/4 cup, chopped
Lemon juice
2 tablespoons
Olive oil
3 tablespoons, plus more for brushing
Salt
to taste
Pepper
to taste
Baguette
1, sliced into 1/2-inch thick pieces

Instructions

  1. Bring a pot of salted water to a boil and blanch the fava beans for 2 minutes. Drain and immediately rinse with cold water to stop the cooking process.
  2. Once cooled, gently remove the outer skin from each fava bean to reveal the tender green bean inside.
  3. In a large bowl, combine the peeled fava beans, drained tuna, minced garlic, lemon juice, chopped parsley, chopped mint, olive oil, salt, and pepper. Mix gently until well combined, being careful not to mash the fava beans.
  4. Preheat the oven to 350°F (175°C).
  5. Brush the baguette slices with olive oil on both sides and arrange them on a baking sheet.
  6. Bake in the preheated oven for 5-7 minutes, or until the bread is golden brown and crispy.
  7. Remove the toasted bread from the oven and allow it to cool slightly.
  8. Top each slice of toasted baguette with a generous spoonful of the fava bean and tuna mixture.
  9. Serve immediately and enjoy the vibrant flavors of this Mediterranean delight!
