
Fava Bean Salad
This refreshing fava bean salad is packed with flavors and textures, perfect for a light and healthy meal.
Ingredients
- Salt and pepper (to taste)
- Extra virgin olive oil (2 tablespoons)
- Lemon juice (2 tablespoons)
- Fresh mint leaves (1/4 cup, chopped)
- Feta cheese (1/2 cup, crumbled)
- Red onion (1/4 cup, thinly sliced)
- Cucumber (1, diced)
- Cherry tomatoes (1 cup, halved)
- Fava beans (2 cups, shelled)
Instructions
- Bring a pot of salted water to a boil. Add the fava beans and cook for 3-4 minutes, until tender. Drain and rinse with cold water.
- Remove the outer skin from the fava beans by gently squeezing them. Discard the skins.
- In a large bowl, combine the fava beans, cherry tomatoes, cucumber, red onion, feta cheese, and mint leaves.
- In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper. Pour the dressing over the salad and toss to combine.
- Let the salad marinate for at least 10 minutes before serving to allow the flavors to meld together.
