Tuscan Fava Bean Soup

Instructions
- Thoroughly rinse the dried fava beans under cold water. Soak them in a large bowl of water overnight. After soaking, drain and set them aside.
- In a large pot, heat the olive oil over medium heat. Add the chopped onion, carrot, celery, and minced garlic. Sauté the vegetables until they become tender, which should take about 5 minutes.
- Add the soaked fava beans to the pot, along with the vegetable broth, diced tomato, bay leaf, thyme, salt, and pepper. Stir well and bring the mixture to a boil.
- Once boiling, reduce the heat to low, cover the pot, and let the soup simmer. Cook for about 30 minutes, or until the fava beans become tender.
- After the beans have cooked, remove the bay leaf from the pot and discard it.
- Using an immersion blender or a regular blender, puree the soup until it reaches a smooth consistency. If using a regular blender, make sure to let the soup cool slightly before blending it to prevent hot splashes.
- Return the pureed soup to the pot and heat it over low heat until it's warmed through.

Tips
