Kalamata olives
1/2 cup, pitted and sliced
Red onion
1/2 medium, thinly sliced
Tomato
1 medium, chopped
Cucumber
1/2 english cucumber, chopped
Feta cheese
1 cup, crumbled
Whole wheat tortillas
4 large

Instructions

  1. In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper to create a vibrant and tangy dressing. Set aside.
  2. Lay the tortillas flat on your workspace.
  3. Evenly distribute the crumbled feta cheese, chopped cucumber, tomato, thinly sliced red onion, sliced Kalamata olives, and chopped fresh parsley among the tortillas.
