Ingredients
- Fresh figs
- 12, ripe and firm
- Almonds
- 1 cup, finely chopped
- Egg
- 1, beaten
- Feta cheese
- 1/2 cup, crumbled
- Honey
- 2 tablespoons, for drizzling
- Fresh mint leaves
- 1/4 cup, for garnish
- Salt
- 1/4 teaspoon
Instructions
- Preheat the oven to 375°F (190°C).
- Carefully cut a small slit in the top of each fig, about halfway down, to create a pocket for the filling.
- In a shallow bowl, combine the finely chopped almonds and a pinch of salt; mix well.
- Dip each fig into the beaten egg, ensuring they are well-coated, then roll them in the almond mixture, pressing gently to help the crumbs adhere.
- Place the coated figs on a baking sheet lined with parchment paper, ensuring they are spaced apart to allow for even baking.
- Bake in the preheated oven for 8-10 minutes, or until the almond crust is golden brown and crunchy.
- Remove the figs from the oven and let them cool for a few minutes on the baking sheet to firm up.
- Once slightly cooled, top each fig with crumbled feta cheese and drizzle with honey for added sweetness.
- Garnish with fresh mint leaves before serving warm.
Tips
- For an extra layer of flavor, consider adding a pinch of black pepper to the almond mixture.
- You can substitute goat cheese for feta for a different tangy taste.
- If you're looking for a little heat, sprinkle some red pepper flakes on top before serving.
