Fig and Bacon Jam

Ingredients
- 1/2 pound, chopped Bacon
- 2 cups, chopped Fresh figs
- 1 medium, finely chopped Onion
- 1/2 cup Brown sugar
- 1/4 cup Apple cider vinegar
- 2 tablespoons Maple syrup
- 1/2 teaspoon Ground cinnamon
- 1/4 teaspoon Ground cloves
- 1/2 teaspoon Salt
- 1/4 teaspoon Black pepper

Instructions
- In a large skillet, cook the chopped bacon over medium heat until crispy. Using a slotted spoon, remove the bacon from the skillet and set aside on a paper towel-lined plate to drain.
- In the same skillet with the bacon drippings, add the chopped figs and onion. Cook over medium heat until the figs are soft and the onion is translucent, about 5 minutes.
- Return the cooked bacon to the skillet. Add the brown sugar, apple cider vinegar, maple syrup, ground cinnamon, ground cloves, salt, and black pepper. Stir well to combine all the ingredients.
- Lower the heat and let the mixture simmer for about 45 minutes, stirring occasionally. The jam should reduce and thicken.
- Once thickened, remove the skillet from the heat and allow the jam to cool completely.
- Transfer the cooled jam to a jar or airtight container and refrigerate for at least 1 hour before serving. This allows the flavors to meld together beautifully.
- Serve your homemade Fig and Bacon Jam with a selection of cheeses, crackers, or as a gourmet spread on sandwiches. It also works wonderfully as a glaze for grilled meats.
Tips
- For a smokier flavor, opt for smoked bacon. If fresh figs are not available, dried figs rehydrated in warm water can be used. The jam can be stored in the refrigerator for up to 2 weeks.
