Ingredients

  • Fresh figs (12, halved lengthwise)
  • Bacon slices (12, cut in half)
  • Salt (to taste)
  • Black pepper (to taste)
  • Fresh rosemary (1 sprig)
  • Honey (2 tablespoons)
  • Balsamic vinegar (1/2 cup)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut each fig in half lengthwise, creating two halves per fig.
  3. Wrap each fig half with a half slice of bacon and secure with a toothpick to hold it in place.
  4. Place the wrapped figs on a baking sheet lined with parchment paper to prevent sticking.
  5. Bake for 15-20 minutes, or until the bacon is crispy and golden brown.
  6. While the figs are baking, prepare the balsamic reduction. In a small saucepan, combine the balsamic vinegar, honey, and fresh rosemary.
  7. Bring the mixture to a simmer over medium heat and cook for 5-7 minutes, or until it thickens to a syrupy consistency.
  8. Remove the rosemary sprig from the reduction and let it cool slightly.
  9. Once the figs are out of the oven, allow them to cool for a few minutes.
  10. Drizzle the balsamic reduction generously over the bacon-wrapped figs.
