Fresh figs
12, stems removed
Goat cheese
4 oz, softened
Bacon slices
12, cut in half
Balsamic vinegar
1 cup
Honey
2 tablespoons
Fresh thyme leaves
1 tablespoon, plus extra for garnish
Salt
to taste
Pepper
to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut a small slit in the top of each fig and gently stuff with a small amount of softened goat cheese.
  3. Wrap each stuffed fig with a half slice of bacon and secure with a toothpick.
  4. Arrange the wrapped figs on a baking sheet lined with parchment paper, ensuring they are not overcrowded.
  5. Bake in the preheated oven for 15-20 minutes, or until the bacon is crispy and the figs are soft.
  6. While the figs are baking, prepare the balsamic reduction. In a small saucepan, combine the balsamic vinegar and honey. Bring the mixture to a simmer over medium heat and cook, stirring occasionally, until it has reduced by half and reached a syrupy consistency (about 10-15 minutes).
