Serves 4

Ingredients

Fresh mint leaves
a small bunch
Ricotta cheese
1 cup
Honey
1/4 cup
Balsamic vinegar
1/4 cup
Fresh figs
8 whole figs

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Slice a small cross at the top of each fig, cutting about halfway down - this will allow the glaze to seep in.
  3. Prepare the balsamic glaze: In a small saucepan, combine the balsamic vinegar and honey. Simmer the mixture over medium heat for 2-3 minutes until it thickens slightly.
  4. Arrange the figs on a baking sheet lined with parchment paper. Drizzle the prepared balsamic glaze generously over the figs, ensuring some gets inside the cuts.
  5. Bake the figs in the preheated oven for 10-12 minutes until they are softened and slightly caramelized.
  6. While the figs are baking, distribute the ricotta cheese evenly into four serving dishes.
  7. Remove the figs from the oven and let them cool slightly.
  8. Carefully transfer two glazed figs to each serving dish with ricotta cheese.
  9. Garnish each dish with fresh mint leaves.
  10. Serve immediately for the best flavor and enjoy!
