Serves 4

Ingredients

Olive oil
2 tablespoons
Fresh basil
a handful, finely chopped
Salt and pepper
to taste
Garlic
2 cloves, minced
Honey
2 tablespoons
Balsamic vinegar
1/4 cup
Fresh figs
6, halved
Shrimp
1 lb, peeled and deveined

Instructions

  1. In a small bowl, whisk together balsamic vinegar, honey, minced garlic, salt, and pepper to create the glaze. Set this aside.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add shrimp to the skillet. Cook for 2-3 minutes on each side, until they turn a vibrant pink color and are cooked through. Once done, remove them from the skillet and set aside.
  4. In the same skillet, add the halved figs. Cook for 2-3 minutes until they soften slightly.
  5. Pour the prepared balsamic glaze over the figs, stirring to coat them evenly.
  6. Return the cooked shrimp to the skillet. Toss them with the figs and balsamic glaze, ensuring they are well coated.
  7. Cook for an additional 1-2 minutes, so the shrimp are heated through and absorb some of the fig and balsamic flavors.
  8. Remove the skillet from heat. Sprinkle your dish with fresh chopped basil.
  9. Serve hot. This dish can be an appetizer or a main course when served over a bed of rice or salad.

Tips

  • 💡 Choosing ripe figs is crucial for this recipe as they contribute significantly to the overall sweetness and flavor of the dish.
  • 💡 Try to use fresh, wild-caught shrimp if possible. They have a superior flavor and texture compared to their farm-raised counterparts.
