Ingredients

Large mushrooms
12, stems removed
Dried figs
1 cup, chopped
Blue cheese
4 ounces, crumbled
Breadcrumbs
1/2 cup
Fresh parsley
1/4 cup, chopped
Olive oil
2 tablespoons
Salt
1/2 teaspoon, to taste
Black pepper
1/4 teaspoon, to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Carefully remove the stems from the mushrooms and finely chop them; set aside.
  3. In a large bowl, combine the chopped figs, crumbled blue cheese, breadcrumbs, chopped parsley, olive oil, and the reserved chopped mushroom stems. Season with salt and pepper to taste. Mix well until all ingredients are combined.
