- Chicken breasts
- 4, boneless and skinless
- Figs
- 1 cup, chopped (fresh or dried)
- Feta cheese
- 1/2 cup, crumbled
- Olive oil
- 2 tablespoons
- Salt
- 1 teaspoon, divided
- Black pepper
- 1/2 teaspoon
- Garlic
- 2 cloves, minced
- Fresh thyme
- 2 teaspoons, chopped (plus extra for garnish)
Instructions
- Preheat the oven to 375°F (190°C).
- Using a sharp knife, carefully cut a pocket into each chicken breast, ensuring not to cut all the way through.
- In a mixing bowl, combine the chopped figs, crumbled feta cheese, minced garlic, 1 tablespoon of olive oil, 1/2 teaspoon of salt, and black pepper. Mix well until combined.
- Stuff each chicken breast with the fig and feta mixture, pressing it in firmly to secure the filling.
- Heat the remaining tablespoon of olive oil in a skillet over medium-high heat. Sear the stuffed chicken breasts for about 3-4 minutes on each side until golden brown.
- Transfer the seared chicken breasts to a baking dish and bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
- Let the chicken rest for a few minutes before slicing. Garnish with fresh thyme if desired.
