Ingredients

Chicken breasts
4, boneless and skinless
Figs
1 cup, chopped (fresh or dried)
Feta cheese
1/2 cup, crumbled
Olive oil
2 tablespoons
Salt
1 teaspoon, divided
Black pepper
1/2 teaspoon
Garlic
2 cloves, minced
Fresh thyme
2 teaspoons, chopped (plus extra for garnish)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Using a sharp knife, carefully cut a pocket into each chicken breast, ensuring not to cut all the way through.
  3. In a mixing bowl, combine the chopped figs, crumbled feta cheese, minced garlic, 1 tablespoon of olive oil, 1/2 teaspoon of salt, and black pepper. Mix well until combined.
  4. Stuff each chicken breast with the fig and feta mixture, pressing it in firmly to secure the filling.
  5. Heat the remaining tablespoon of olive oil in a skillet over medium-high heat. Sear the stuffed chicken breasts for about 3-4 minutes on each side until golden brown.
  6. Transfer the seared chicken breasts to a baking dish and bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
  7. Let the chicken rest for a few minutes before slicing. Garnish with fresh thyme if desired.
