Ingredients
- All-purpose flour
- 1 1/2 cups
- Granulated sugar
- 1 tablespoon
- Salt
- 1/2 teaspoon
- Unsalted butter
- 1/2 cup, cold and cubed
- Ice water
- 4-6 tablespoons
- Fresh figs
- 1 pound, sliced
- Goat cheese
- 4 ounces, crumbled
- Honey
- 2 tablespoons
- Fresh thyme leaves
- 1 tablespoon
- Egg
- 1, beaten (for egg wash)
Instructions
- In a large mixing bowl, combine the flour, sugar, and salt.
- Add the cold cubed butter to the flour mixture. Using a pastry cutter or your fingers, cut the butter into the flour until it resembles coarse crumbs.
- Gradually add the ice water, one tablespoon at a time, stirring after each addition. Continue to add water until the dough just comes together. Be careful not to overmix.
- Shape the dough into a disk, wrap in plastic wrap, and chill in the refrigerator for at least 30 minutes.
- Preheat your oven to 375°F (190°C).
- Lightly flour a surface and roll out the chilled dough into a circle about 12 inches in diameter.
- Transfer the rolled-out dough to a baking sheet lined with parchment paper.
- Arrange the sliced figs and crumbled goat cheese in the center of the dough, leaving a 2-inch border.
- Drizzle the honey over the figs and goat cheese, then sprinkle with fresh thyme leaves.
- Fold the edges of the dough over the filling, pleating as necessary to create a rustic look.
- Brush the edges of the dough with the beaten egg. This will give the crust a beautiful golden color.
- Bake in the preheated oven for 25-30 minutes, or until the crust is golden brown and the filling is bubbling.
- Remove from the oven and let cool for a few minutes before serving. The galette can be enjoyed warm or at room temperature.
