Serves 4

Ingredients

Fresh parsley
1/4 cup, chopped (for garnish)
Salt
1/2 teaspoon
Black pepper
1/4 teaspoon
Balsamic vinegar
2 tablespoons
Olive oil
2 tablespoons
Honey
3 tablespoons
Dried figs
1 cup, chopped
Carrots
1 pound, peeled and cut into sticks

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a small bowl, whisk together the honey, olive oil, balsamic vinegar, salt, and black pepper until well combined.
  3. On a baking sheet, spread the carrots and chopped dried figs in a single layer. Drizzle the honey mixture over the carrots and figs, then toss to coat evenly.
  4. Roast in the preheated oven for 20-25 minutes, stirring halfway through, until the carrots are tender and caramelized at the edges.
  5. Remove from the oven and let cool slightly. Garnish with freshly chopped parsley before serving.

Tips

  • 💡 For a spicier kick, add a pinch of cayenne pepper to the honey mixture.
  • 💡 Feel free to substitute fresh thyme or rosemary for parsley if you prefer a different herb flavor.
  • 💡 For added crunch, consider tossing in some chopped walnuts or pecans before roasting.
