Ingredients
- Pork tenderloin
- 1 1/2 pounds
- Olive oil
- 2 tablespoons
- Salt
- 1 teaspoon
- Black pepper
- 1/2 teaspoon
- Garlic
- 3 cloves, minced
- Dijon mustard
- 2 tablespoons
- Honey
- 1/4 cup
- Dried figs
- 1 cup, chopped
Instructions
- Preheat the oven to 375°F (190°C).
- Season the pork tenderloin generously with salt and pepper on all sides.
- In an oven-safe skillet, heat the olive oil over medium-high heat.
- Sear the pork tenderloin for about 2-3 minutes on each side until it is browned all over.
- Remove the pork from the skillet and set aside on a plate.
- In the same skillet, add the chopped figs, honey, Dijon mustard, minced garlic, and a pinch of salt and pepper.
- Cook for 2-3 minutes, stirring occasionally, until the figs soften and the sauce thickens slightly.
- Return the seared pork tenderloin to the skillet, spooning the fig and honey glaze over the top.
- Transfer the skillet to the preheated oven and roast for 20-25 minutes, or until the pork reaches an internal temperature of 145°F (63°C).
- Once done, remove from the oven and let the pork rest for 5 minutes before slicing.
- Serve the sliced pork drizzled with the remaining fig and honey glaze.
