Ingredients

Unsalted butter
1/2 cup (softened)
Granulated sugar
1/2 cup
Egg
1 large
Vanilla extract
1 teaspoon
All-purpose flour
1 1/2 cups
Baking powder
1 teaspoon
Salt
1/4 teaspoon
Dried figs
1 cup (chopped)
Orange marmalade
1/4 cup
Powdered sugar
for dusting

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together the softened butter and granulated sugar until the mixture is light and fluffy, about 3-5 minutes.
  3. Add the egg and vanilla extract to the butter mixture and mix until thoroughly combined.
  4. In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the butter mixture, mixing until just combined. Be careful not to overmix.
  6. Gently fold in the orange marmalade and chopped dried figs until evenly distributed throughout the dough.
  7. Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart to allow for spreading.
  8. Bake for 10-12 minutes, or until the edges are golden brown but the centers remain soft.
  9. Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
  10. Once cooled, dust the cookies with powdered sugar for an elegant finish.
  11. Serve and enjoy these delightful cookies with a cup of tea or coffee!
