
Fig and Orange Marmalade Cookies
These delicious cookies are made with a combination of figs and orange marmalade, creating a perfect balance of sweetness and tanginess.
Ingredients
- Powdered sugar (for dusting)
- Dried figs (1/2 cup, chopped)
- Orange marmalade (1/2 cup)
- Salt (1/2 teaspoon)
- Baking powder (1 teaspoon)
- All (purpose flour - 2 cups)
- Vanilla extract (1 teaspoon)
- Egg (1)
- Granulated sugar (1 cup)
- Unsalted butter (1 cup)
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, cream together the butter and granulated sugar until light and fluffy.
- Add the egg and vanilla extract to the butter mixture and mix until well combined.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the butter mixture, mixing until just combined.
- Fold in the orange marmalade and chopped dried figs.
- Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes, or until the edges are golden brown.
- Remove from the oven and let the cookies cool on the baking sheet for 5 minutes.
- Transfer the cookies to a wire rack to cool completely.
- Once cooled, dust the cookies with powdered sugar.
