Ingredients

  • Powdered sugar (for dusting)
  • Dried figs (1/2 cup, chopped)
  • Orange marmalade (1/2 cup)
  • Salt (1/2 teaspoon)
  • Baking powder (1 teaspoon)
  • All (purpose flour - 2 cups)
  • Vanilla extract (1 teaspoon)
  • Egg (1)
  • Granulated sugar (1 cup)
  • Unsalted butter (1 cup)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together the butter and granulated sugar until light and fluffy.
  3. Add the egg and vanilla extract to the butter mixture and mix until well combined.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the butter mixture, mixing until just combined.
  6. Fold in the orange marmalade and chopped dried figs.
  7. Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes, or until the edges are golden brown.
  9. Remove from the oven and let the cookies cool on the baking sheet for 5 minutes.
  10. Transfer the cookies to a wire rack to cool completely.
  11. Once cooled, dust the cookies with powdered sugar.
