Lohikeitto - Finnish Creamy Fish Soup
Lohikeitto, as it's known in Finland, is a comforting, creamy soup that's packed with tender pieces of fresh fish, hearty potatoes, and vibrant carrots, all beautifully contrasted by the subtle sweetness of leeks and onions. - 1, finely chopped Onion
- 2, diced Carrots
- 2, diced Potatoes
- 500 grams, cut into bite-sized pieces Fish fillets

Instructions
- In a large pot, melt the butter over medium heat.
- Add the finely chopped onion and thinly sliced leek to the pot. Sauté until they become translucent and fragrant, about 5 minutes.
- Add the diced potatoes and carrots to the pot, stirring to combine with the onions and leeks. Cook for another 5 minutes.
- Pour in the fish stock, ensuring it covers the vegetables. Bring the mixture to a boil. Once boiling, reduce the heat and let it simmer for about 15 minutes, until the vegetables are tender.
- Add the bite-sized pieces of fish fillets to the pot. Let them cook until they turn opaque and flake easily with a fork, about 5 minutes.
- Once the fish is cooked, stir in the heavy cream and chopped dill. Season the soup with salt and pepper, adjusting to taste.
- Allow the soup to simmer for another 5 minutes, letting all the flavors meld together.
- Serve your Lohikeitto hot, garnishing each bowl with a sprig of fresh dill for an authentic Finnish touch. Enjoy!
Tips
- For a lighter version, substitute half of the heavy cream with milk or a dairy-free alternative.
- Any type of white fish works well for this recipe. Salmon can also be used for a richer flavor.
