Fish Bobotie

- 2 slices, preferably white or whole wheat Bread
- 1 cup, divided Milk
- 1 medium, finely chopped Onion
- 2 cloves, minced Garlic
- 2, beaten Eggs
- 1 tablespoon Lemon juice
- 1 teaspoon Turmeric
- 2 teaspoons Curry powder
- 2, for garnish Bay leaves

- 1 tablespoon, for sautéing Olive oil

Instructions
- Preheat the oven to 180°C (350°F).
- Soak the bread in half the milk (1/2 cup) and set aside for about 10 minutes until soft.
- In a large pan, heat the olive oil over medium heat. Sauté the onion and garlic until soft and translucent, about 5-7 minutes.
- Add the curry powder and turmeric to the pan, stirring for an additional minute to release their aromas.
- Gently add the fish fillets, lemon juice, salt, and pepper. Cook for about 5-7 minutes until the fish is cooked through and flakes easily. Remove from heat and let cool slightly.
- Squeeze out the excess milk from the soaked bread and crumble it into the fish mixture, combining well.
- Spread the fish and bread mixture evenly in a greased baking dish.
- In a separate bowl, beat together the eggs with the remaining milk (1/2 cup) and pour this custard mixture over the fish layer. Place the bay leaves on top to infuse additional flavor as it bakes.
- Bake for approximately 45 minutes, or until the custard is set and the top is golden brown.
- Let it cool for a few minutes before serving. Enjoy warm!
