- 1 pound, cut into chunks Fresh cod fillets

- 1 medium, diced Onion
- 2 stalks, diced Celery
- 1 medium, diced Carrot
- 2 cups, diced (about 2 medium potatoes) Potatoes
- 4 cups Fish stock
- 1 Bay leaf
- 1 teaspoon, dried or 1 tablespoon fresh Thyme
- 1 cup Heavy cream

Instructions
- In a large pot, heat the olive oil over medium heat until shimmering.
- Add the diced onion, celery, and carrot to the pot. Sauté for about 5 minutes, or until the vegetables are softened and fragrant.
- Stir in the diced potatoes, fish stock, bay leaf, and thyme. Bring the mixture to a boil, then reduce the heat and let it simmer for 15 minutes, or until the potatoes are tender.
- Gently fold the cod chunks into the pot and cook for an additional 5 minutes, or until the fish is opaque and flakes easily with a fork.
- Stir in the heavy cream and season with salt and pepper to taste. Allow the chowder to cook for another 5 minutes to heat through.
- Remove the bay leaf from the chowder and discard.
- Serve the chowder hot, garnished with freshly chopped parsley for a burst of color and flavor.
