Authentic Indian Fish Gravy

- 1 teaspoon Cumin powder
- 1 teaspoon Coriander powder
- 1/2 teaspoon Red chili powder
- 1/2 teaspoon Turmeric powder
- 1 inch piece, finely chopped Ginger
- 2 medium, finely chopped Tomatoes
- 2 medium, finely chopped Onions
- 500 grams, boneless Fish fillets

Instructions
- Heat oil in a pan over medium heat and add the chopped onions. Sauté until they turn golden brown.
- Add finely chopped ginger and sauté for a minute until the raw smell disappears.
- Add chopped tomatoes and cook until they turn soft and mushy.
- Add turmeric powder, red chili powder, coriander powder, cumin powder, and salt. Stir well until the spices are well incorporated with the onion-tomato mixture.
- Add the fish fillets, gently mixing them with the spice mixture to ensure they are evenly coated.
- Cover the pan and let it simmer for about 10-15 minutes, or until the fish is cooked through. Make sure to check the fish occasionally to prevent it from sticking to the pan.
- Sprinkle garam masala over the fish and mix gently. Garnish with fresh coriander leaves.
