Fish Tacos with Vibrant Mango Salsa

- 1/4 cup, chopped Fresh cilantro
- 1, seeded and finely chopped Jalapeno
- 1/2, finely chopped Red onion
- 1, peeled, pitted, and diced Mango
- 8 Corn tortillas
- 1 tablespoon Olive oil
- 2 tablespoons Taco seasoning
- 4 (4 ounces each) White fish fillets

Instructions
- Season both sides of the fish fillets generously with taco seasoning.
- Heat the olive oil in a skillet over medium heat. Once hot, add the fish and cook until it's opaque and flakes easily with a fork, about 4 minutes per side. Remove from heat.
- While the fish is cooking, prepare the mango salsa. In a medium bowl, combine the diced mango, chopped red onion, chopped jalapeno, chopped cilantro, juice of one lime, and season with salt and pepper. Mix well to combine.
- Warm the corn tortillas in a dry skillet over medium heat for about 30 seconds on each side until they're soft and pliable. Keep warm.
- To assemble the tacos, lay a warm tortilla on a flat surface, place a piece of cooked fish in the center, and generously top with the mango salsa. Repeat with the remaining tortillas.

- For a variation, try using different types of fish or even shrimp. You can also add a dollop of sour cream or a sprinkle of cheese for extra flavor.
