Fish Tacos with Vibrant Mango Salsa
Experience a burst of tropical flavors with these Fish Tacos topped with a vibrant Mango Salsa, an irresistible blend of sweet and tangy. These tacos are a perfect light and refreshing meal, especially for those warm summer days. This recipe has its roots in Mexican coastal cuisine where seafood is seamlessly combined with fresh fruit salsas. It's a beach vacation served on a plate!
Servings: 4
Ingredients
- Salt and pepper (to taste)
- Lime (1, juiced)
- Fresh cilantro (1/4 cup, chopped)
- Jalapeno (1, seeded and finely chopped)
- Red onion (1/2, finely chopped)
- Mango (1, peeled, pitted, and diced)
- Corn tortillas (8)
- Olive oil (1 tablespoon)
- Taco seasoning (2 tablespoons)
- White fish fillets (4 (4 ounces each))
Instructions
- Season both sides of the fish fillets generously with taco seasoning.
- Heat the olive oil in a skillet over medium heat. Once hot, add the fish and cook until it's opaque and flakes easily with a fork, about 4 minutes per side. Remove from heat.
- While the fish is cooking, prepare the mango salsa. In a medium bowl, combine the diced mango, chopped red onion, chopped jalapeno, chopped cilantro, juice of one lime, and season with salt and pepper. Mix well to combine.
- Warm the corn tortillas in a dry skillet over medium heat for about 30 seconds on each side until they're soft and pliable. Keep warm.
- To assemble the tacos, lay a warm tortilla on a flat surface, place a piece of cooked fish in the center, and generously top with the mango salsa. Repeat with the remaining tortillas.
