Ingredients

Original recipe serves 4

Pizza dough
1, enough for a thin crust pizza
Crème fraîche
1/2 cup
Onions
2, thinly sliced
Lardons or thick-cut bacon
1/2 cup, diced
Salt
1/2 teaspoon, or to taste
Black pepper
1/4 teaspoon, freshly ground
Nutmeg
a pinch, freshly grated

Instructions

  1. Preheat your oven to its highest setting, usually around 500°F (260°C). If you have a pizza stone, place it in the oven to preheat.
  2. On a lightly floured surface, roll out the pizza dough as thin as you can, aiming for a rectangle shape if possible.
  3. Spread the crème fraîche evenly over the rolled-out pizza dough, leaving a small border around the edges for the crust.
  4. Scatter the thinly sliced onions and diced lardons or bacon evenly over the crème fraîche.
  5. Season the toppings with salt, freshly ground black pepper, and a pinch of freshly grated nutmeg.
  6. Carefully transfer the Flammekueche onto the preheated pizza stone in the oven. If you don't have a pizza stone, use a baking sheet.
  7. Bake for about 10-15 minutes, or until the crust is crisp and golden, and the toppings are lightly browned and caramelized.
  8. Remove from the oven and allow to cool for a few minutes before cutting into squares or strips. Serve warm, and enjoy this Alsatian delicacy!
