Flaó - Ibiza's Delightful Cheesecake
Flaó is a beloved traditional dessert from the enchanting island of Ibiza, known for its vibrant flavors and aromatic ingredients. This sweet tart combines the creamy texture of fresh cheese with the refreshing notes of mint and the distinctive taste of anise liqueur, creating a dessert that is not only delicious but also steeped in history. Traditionally enjoyed during festive occasions, Flaó is a celebration of the island's culinary heritage, bringing a taste of Ibiza to your table.
Ingredients
- All-purpose flour
- 200 grams (for the pastry)
- Unsalted butter
- 100 grams, softened (for the pastry)
- Granulated sugar
- 50 grams (for the pastry)
- Egg
- 1 large (for the pastry)
- Fresh cheese
- 400 grams, such as ricotta or a similar soft cheese (for the filling)

- Fresh mint leaves
- 30 grams, finely chopped (for the filling)
- Anise liqueur
- 50 ml (for the filling)
Instructions
- To prepare the pastry, combine the flour, softened butter, sugar, and egg in a mixing bowl. Mix until a smooth dough forms.
- Wrap the dough in cling film and chill in the refrigerator for 30 minutes.
- Preheat your oven to 180°C (350°F) or gas mark 4.
- On a lightly floured surface, roll out the chilled dough to fit a 23cm tart tin. Carefully line the tin with the dough, pricking the base with a fork to prevent bubbling. Chill again for 15 minutes.
- For the filling, in a large bowl, beat together the fresh cheese, sugar, eggs, chopped mint, and anise liqueur until smooth and well-combined.
- Pour the filling into the prepared pastry case, smoothing the top with a spatula.
- Bake in the preheated oven for 50 minutes, or until the filling is set and has a lovely golden color.
- Once baked, remove from the oven and allow to cool before serving. Flaó is best enjoyed chilled, allowing the flavors to meld beautifully.
Tips
- For a twist, try adding a pinch of grated lemon or orange zest to the filling for a citrusy brightness.
- If fresh cheese is hard to find, you can substitute it with a mix of cream cheese and Greek yogurt for a similar texture and flavor.
