Grilled Flat Steak with Zesty Chimichurri Sauce

Ingredients
- Flat steak
- 1.5 pounds
- Olive oil
- 1/4 cup, plus more for seasoning
- Garlic
- 4 cloves, minced

- Black pepper

- Fresh parsley
- 1 cup, packed
- Fresh cilantro
- 1/2 cup, packed
- Red wine vinegar
- 3 tablespoons
- Lemon juice
- 2 tablespoons
- Oregano
- 1 teaspoon, dried
- Red pepper flakes
- 1/2 teaspoon
Instructions
- Preheat your grill to high heat, ensuring it is properly heated for a nice sear.
- In a small bowl, mix together 1/4 cup of olive oil, minced garlic, salt, and black pepper. Rub this mixture over the flat steak, allowing the flavors to penetrate the meat.
- Grill the flat steak for 5-7 minutes on each side, or until it reaches your desired level of doneness (medium-rare is recommended for optimal tenderness).
- While the steak is grilling, prepare the chimichurri sauce. In a food processor, combine the parsley, cilantro, red wine vinegar, lemon juice, oregano, red pepper flakes, and a pinch of salt and pepper. Pulse until well combined and slightly chunky.
