Instructions
- Preheat your grill to high heat, ensuring it is properly heated for a nice sear.
- In a small bowl, mix together 1/4 cup of olive oil, minced garlic, salt, and black pepper. Rub this mixture over the flat steak, allowing the flavors to penetrate the meat.
- Grill the flat steak for 5-7 minutes on each side, or until it reaches your desired level of doneness (medium-rare is recommended for optimal tenderness).
- While the steak is grilling, prepare the chimichurri sauce. In a food processor, combine the parsley, cilantro, red wine vinegar, lemon juice, oregano, red pepper flakes, and a pinch of salt and pepper. Pulse until well combined and slightly chunky.
- Once the steak is cooked, remove it from the grill and let it rest for about 5 minutes to allow the juices to redistribute.
- Slice the steak against the grain and serve topped with the chimichurri sauce.
Tips
- For added flavor, marinate the flat steak in the garlic and olive oil mixture for a few hours or overnight before grilling.
- Feel free to adjust the heat by adding more or less red pepper flakes to the chimichurri sauce.
- This chimichurri sauce also works wonderfully as a marinade or drizzle for grilled vegetables or chicken.
