Flat steak
1.5 pounds
Olive oil
1/4 cup, plus more for seasoning
Garlic
4 cloves, minced
Salt
1 teaspoon
Black pepper
1/2 teaspoon
Fresh parsley
1 cup, packed
Fresh cilantro
1/2 cup, packed
Red wine vinegar
3 tablespoons
Lemon juice
2 tablespoons
Oregano
1 teaspoon, dried
Red pepper flakes
1/2 teaspoon

Instructions

  1. Preheat your grill to high heat, ensuring it is properly heated for a nice sear.
  2. In a small bowl, mix together 1/4 cup of olive oil, minced garlic, salt, and black pepper. Rub this mixture over the flat steak, allowing the flavors to penetrate the meat.
  3. Grill the flat steak for 5-7 minutes on each side, or until it reaches your desired level of doneness (medium-rare is recommended for optimal tenderness).
  4. While the steak is grilling, prepare the chimichurri sauce. In a food processor, combine the parsley, cilantro, red wine vinegar, lemon juice, oregano, red pepper flakes, and a pinch of salt and pepper. Pulse until well combined and slightly chunky.
  5. Once the steak is cooked, remove it from the grill and let it rest for about 5 minutes to allow the juices to redistribute.
  6. Slice the steak against the grain and serve topped with the chimichurri sauce.
