Flathead cherries
4 cups, pitted and halved
Granulated sugar
3/4 cup
Cornstarch
2 tablespoons
Lemon juice
1 tablespoon
Unsalted butter
1/4 cup, melted
Milk
1/2 cup
All-purpose flour
1 1/2 cups
Baking powder
2 teaspoons
Salt
1/4 teaspoon
Granulated sugar (for topping)
2 tablespoons

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine the pitted Flathead cherries, 3/4 cup granulated sugar, cornstarch, and lemon juice. Stir until the cherries are evenly coated and allow to sit for 10 minutes to release their juices.
  3. Pour the cherry mixture into a greased 9-inch baking dish, spreading it evenly across the bottom.
  4. In a separate bowl, whisk together the flour, baking powder, salt, and 2 tablespoons of granulated sugar for the biscuit topping.
  5. Add the melted butter and milk to the dry ingredients. Stir until a soft dough forms; do not over-mix.
  6. Drop spoonfuls of the biscuit dough over the cherry mixture in the baking dish, covering as much of the cherries as possible.
  7. Bake for 45 minutes, or until the biscuit topping is golden brown and the cherry filling is bubbly around the edges.
  8. Allow the cobbler to cool for about 10 minutes before serving. This dish is fantastic on its own or served with a scoop of vanilla ice cream or whipped cream.
