Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine the pitted Flathead cherries, 3/4 cup granulated sugar, cornstarch, and lemon juice. Stir until the cherries are evenly coated and allow to sit for 10 minutes to release their juices.
- Pour the cherry mixture into a greased 9-inch baking dish, spreading it evenly across the bottom.
- In a separate bowl, whisk together the flour, baking powder, salt, and 2 tablespoons of granulated sugar for the biscuit topping.
- Add the melted butter and milk to the dry ingredients. Stir until a soft dough forms; do not over-mix.
- Drop spoonfuls of the biscuit dough over the cherry mixture in the baking dish, covering as much of the cherries as possible.
- Bake for 45 minutes, or until the biscuit topping is golden brown and the cherry filling is bubbly around the edges.
- Allow the cobbler to cool for about 10 minutes before serving. This dish is fantastic on its own or served with a scoop of vanilla ice cream or whipped cream.
Tips
- For a twist, try adding a pinch of cinnamon or nutmeg to the cherry mixture for added warmth.
- Substitute other seasonal fruits like blueberries or peaches if Flathead cherries are not available.
- For a dairy-free version, use almond milk and coconut oil in place of milk and butter.
