Flatkaka, a traditional Icelandic flatbread, is a delightful treat that embodies the rugged spirit of Iceland's culinary heritage. This hearty, rustic bread is made with a combination of rye and all-purpose flour, creating a dense yet tender texture that pairs beautifully with butter, cheeses, or your favorite toppings. Historically, Flatkaka was a staple in Icelandic households, often cooked over an open flame on a griddle, making it a beloved comfort food that has stood the test of time.

Servings: 8

Ingredients

Unsalted butter
2 tablespoons, melted (for brushing)
Water
1/2 cup
Buttermilk
1/2 cup
Salt
1 teaspoon
Baking powder
1 teaspoon
All-purpose flour
1 cup
Rye flour
1 cup

Instructions

  1. In a large bowl, whisk together the rye flour, all-purpose flour, baking powder, and salt until well combined.
  2. Gradually add the buttermilk and water to the dry ingredients. Mix gently until a dough begins to form.
  3. Transfer the dough to a lightly floured surface and knead for about 5 minutes, until the dough is smooth and elastic.
  4. Divide the dough into 8 equal portions and shape each portion into a smooth ball.
  5. Using a rolling pin, roll out each ball into a thin circle, approximately 6 inches in diameter.
  6. Heat a griddle or large skillet over medium heat until hot.
  7. Cook each flatbread for about 2-3 minutes on each side, or until golden brown and cooked through. Adjust the heat as necessary to avoid burning.
  8. While still warm, brush each flatbread with melted butter for a rich flavor.
  9. Serve the flatkaka warm, paired with butter, cheese, or your favorite toppings.
