Onions

Beef broth
1/4 cup
Gruyere cheese
4 slices
Swiss cheese
4 slices
Bread
4 slices, preferably sourdough or rustic bread

Instructions

  1. In a large skillet, heat the butter and olive oil over medium heat until melted.
  2. Add the sliced onions to the skillet and cook, stirring occasionally, until they are caramelized and golden brown, about 15-20 minutes. Season with salt, pepper, and thyme during the cooking process.
  3. Once the onions are caramelized, pour in the beef broth and stir to combine. Allow it to simmer for an additional 2-3 minutes until the liquid reduces slightly. Remove from heat and set aside.
  4. Spread butter on one side of each slice of bread.
  5. In the same skillet, place two slices of bread, buttered side down, over medium heat.
  6. Layer each slice with one slice of Gruyere cheese and one slice of Swiss cheese.
  7. Divide the caramelized onions evenly between the two sandwiches, topping each with another slice of Gruyere and Swiss cheese.
  8. Top with the remaining bread slices, buttered side up.
