Fricasé de Pollo is a hearty and aromatic Cuban chicken stew that beautifully combines tender chicken, golden potatoes, and a rich, savory tomato-based sauce. Ingredients
- Vegetable oil
- 3 tablespoons
- Chicken
- 4 pounds, cut into pieces
- Onion
- 1 large, diced
- Garlic
- 4 cloves, minced
- Bell pepper
- 1 medium, diced
- Tomato sauce
- 1 cup
- Chicken broth
- 2 cups
- Potatoes
- 2 large, peeled and cubed
- Cumin
- 1 teaspoon
- Oregano
- 1 teaspoon
- Bay leaf
- 1
- Salt
- to taste
- Black pepper
- to taste
- Capers
- 2 tablespoons
- Green olives
- 1/2 cup, pitted and sliced
- Fresh cilantro
- for garnish
Instructions
- In a large pot, heat the vegetable oil over medium heat.
- Add the chicken pieces and cook until browned on all sides. Remove the chicken from the pot and set aside.
- In the same pot, add the diced onion, minced garlic, and diced bell pepper. Cook until the vegetables are softened, about 5 minutes.
- Stir in the tomato sauce, chicken broth, cumin, oregano, bay leaf, salt, and pepper. Mix well to combine.
- Return the browned chicken to the pot, followed by the cubed potatoes, sliced olives, and capers. Bring the mixture to a boil.
- Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 45 minutes, or until the chicken is thoroughly cooked and the potatoes are tender.
- Remove the bay leaf and taste for seasoning, adjusting with more salt and pepper if necessary.
- Garnish with fresh cilantro before serving.
- Serve the Fricasé de Pollo hot, alongside rice or crusty bread to soak up the flavorful sauce.
