Fricasé de Pollo is a hearty and aromatic Cuban chicken stew that beautifully combines tender chicken, golden potatoes, and a rich, savory tomato-based sauce. This dish is a celebration of Cuban flavors, featuring a medley of spices and the vibrant addition of olives and capers. Ingredients

Vegetable oil
3 tablespoons
Chicken
4 pounds, cut into pieces
Onion
1 large, diced
Garlic
4 cloves, minced
Bell pepper
1 medium, diced
Tomato sauce
1 cup
Chicken broth
2 cups
Potatoes
2 large, peeled and cubed
Cumin
1 teaspoon
Oregano
1 teaspoon
Bay leaf
1
Salt
to taste
Black pepper
to taste
Capers
2 tablespoons
Green olives
1/2 cup, pitted and sliced
Fresh cilantro
for garnish

Instructions

  1. In a large pot, heat the vegetable oil over medium heat.
  2. Add the chicken pieces and cook until browned on all sides. Remove the chicken from the pot and set aside.
  3. In the same pot, add the diced onion, minced garlic, and diced bell pepper. Cook until the vegetables are softened, about 5 minutes.
  4. Stir in the tomato sauce, chicken broth, cumin, oregano, bay leaf, salt, and pepper. Mix well to combine.
  5. Return the browned chicken to the pot, followed by the cubed potatoes, sliced olives, and capers. Bring the mixture to a boil.
  6. Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 45 minutes, or until the chicken is thoroughly cooked and the potatoes are tender.
  7. Remove the bay leaf and taste for seasoning, adjusting with more salt and pepper if necessary.
  8. Garnish with fresh cilantro before serving.
  9. Serve the Fricasé de Pollo hot, alongside rice or crusty bread to soak up the flavorful sauce.
