- Alligator meat
- 1 pound, cut into bite-sized pieces
- Buttermilk
- 1 cup
- Hot sauce
- 2 tablespoons (plus more for serving)
- Vegetable oil

- All-purpose flour
- 1/2 cup
- Cornmeal
- 1/2 cup
- Paprika
- 1 teaspoon
- Pepper
- 1/2 teaspoon
- Salt
- 1 teaspoon
Instructions
- In a medium bowl, whisk together the buttermilk and hot sauce until well combined. Add the alligator meat, ensuring each piece is coated. Cover and marinate in the refrigerator for at least 1 hour, or up to overnight for more flavor.
- In a separate bowl, combine the flour, cornmeal, salt, pepper, and paprika. Mix well to ensure an even distribution of the seasonings.
- In a deep fryer or large heavy-bottomed pot, heat vegetable oil to 375°F (190°C). You’ll need enough oil to fully submerge the alligator pieces.
- Remove the alligator meat from the marinade, letting the excess liquid drip off. Dredge each piece in the flour mixture, pressing lightly to ensure a good coating. Shake off any excess flour mixture.
- Carefully place the coated alligator pieces into the hot oil a few at a time, being careful not to overcrowd the pot. Fry for about 3-4 minutes, or until golden brown and crispy.
- Using a slotted spoon or tongs, remove the fried alligator from the oil and transfer to a paper towel-lined plate to drain any excess oil.
- Serve hot with additional hot sauce or a dipping sauce of your choice, such as remoulade or a zesty aioli.
