Ingredients

Original recipe serves 2

Salt
to taste
Black pepper
to taste
Unsalted butter
1 tablespoon
Bread
2 slices (your choice of white, whole grain, or sourdough)
Baked beans
1 cup
Tomatoes
2, halved
Mushrooms
1 cup, sliced
Sausages
2-4, depending on preference
Eggs
2-4, depending on preference
Bacon
4 slices

Instructions

  1. Heat a frying pan over medium heat. Add the bacon slices and cook until they are crispy and golden brown, about 4-5 minutes per side. Once cooked, remove from the pan and set aside, keeping warm.
  2. In the same pan, add the sausages. Cook them until they are browned on all sides and cooked through, about 10-12 minutes. Ensure they are fully cooked by checking the internal temperature (should reach 160°F). Remove from the pan and set aside.
  3. Add the sliced mushrooms to the pan and sauté in the leftover bacon grease until they are golden and tender, about 5-7 minutes. Remove from the pan and set aside.
  4. In a separate non-stick pan, melt the butter over medium heat. Crack the eggs into the pan and cook them to your desired doneness (sunny-side up, over-easy, or scrambled). Season with salt and pepper.
  5. While the eggs are cooking, place the bread slices in a toaster and toast until golden brown.
  6. In a small saucepan, heat the baked beans over low heat until warmed through, stirring occasionally. This will enhance their flavor.
  7. To serve, arrange the crispy bacon, sausages, sautéed mushrooms, halved tomatoes, and cooked eggs on a plate. Season with additional salt and pepper to taste.
  8. Serve with a side of warm baked beans and the toasted bread, ensuring every bite captures the full essence of this hearty breakfast. Enjoy!

Tips

  • 💡 For a vegetarian option, substitute the bacon and sausages with plant-based alternatives.
  • 💡 Feel free to add other ingredients like black pudding or hash browns for an even heartier meal.
  • 💡 Experiment with different types of bread, such as a rustic sourdough or a hearty multigrain for added flavor.
