Servings: 4

Ingredients

  • Chicken breasts (2 large, boneless and skinless)
  • Buttermilk (1 cup)
  • All-purpose flour (1 cup)
  • Paprika (1 teaspoon)
  • Black pepper (1/2 teaspoon)
  • Salt (1/2 teaspoon)
  • Vegetable oil (for frying)
  • Honey (1/4 cup)
  • Bread slices (4 large (preferably sandwich or brioche))
  • Lettuce leaves (4 leaves (e.g., romaine or iceberg))
  • Tomato slices (1 large, sliced)

Instructions

  1. In a large bowl, immerse the chicken breasts in buttermilk, ensuring they are fully coated. Cover and marinate in the refrigerator for at least 1 hour (up to overnight for best flavor).
  2. In a shallow dish, combine the all-purpose flour, salt, black pepper, and paprika. Mix well.
  3. Heat vegetable oil in a large skillet over medium-high heat, enough to cover the bottom of the skillet (about 1/2 inch deep).
  4. Remove the marinated chicken from the buttermilk, allowing any excess to drip off. Dredge each piece in the flour mixture, pressing lightly to ensure an even coating.
  5. Carefully place the coated chicken breasts into the hot oil. Fry for about 6-8 minutes on each side, or until they are golden brown and reach an internal temperature of 165°F (75°C).
  6. Once cooked, transfer the chicken to a plate lined with paper towels to absorb excess oil.
  7. While the chicken is draining, toast the bread slices until lightly golden. This adds a delightful crunch to the sandwich.
  8. Spread honey generously on one side of each toasted bread slice.
  9. On two of the honey-spread bread slices, layer with lettuce leaves and tomato slices.
  10. Top each with a piece of the crispy fried chicken, then cover with the remaining bread slices, honey side down.
  11. Cut the sandwiches in half diagonally and serve immediately, enjoying the delightful contrast of crispy chicken and sweet honey.
