Servings: 4
Ingredients
- Enokitake mushrooms
- 200g, cleaned and separated
- Vegetable oil
- 3 tablespoons
- Soy sauce
- 2 tablespoons
- Garlic
- 3 cloves, minced
- Red chilies
- 2, sliced (adjust for heat preference)
- Salt
- to taste
- Green onions
- for garnish (optional)
Instructions
- Begin by cleaning the enokitake mushrooms thoroughly, trimming off the roots to separate the delicate mushroom strands.
- In a large pan or wok, heat the vegetable oil over medium heat until shimmering.
- Add the minced garlic to the hot oil, followed by the sliced red chilies. Sauté for about 1-2 minutes until the garlic is fragrant and slightly golden, being careful not to burn it.
- Carefully add the enokitake mushrooms to the pan, stirring gently to coat them in the oil and garlic mixture. Stir-fry for about 5 minutes, or until the mushrooms become tender but still retain some crunch.
- Pour in the soy sauce and sprinkle with salt to taste, stirring well to ensure the mushrooms are evenly coated in the sauce. Cook for an additional 2-3 minutes, allowing the flavors to meld.
- Remove from heat and serve hot, garnished with additional sliced chilies and chopped green onions if desired.
