Instructions
- Start by seasoning the haddock fillets with salt and pepper on both sides.
- Set up a dredging station: Place the flour in one shallow dish, the beaten eggs in another, and the breadcrumbs in a third.
- Coat each fillet in flour, shaking off any excess, then dip it into the beaten eggs, allowing the excess to drip off, and finally coat it with breadcrumbs, pressing gently to adhere.
- Heat the vegetable oil in a large frying pan over medium-high heat until shimmering.
- Carefully place the coated haddock fillets in the hot oil, frying for about 3-4 minutes on each side, or until they are golden brown and crispy.
- Once cooked, transfer the fillets to a plate lined with paper towels to drain excess oil.
- Serve the fried haddock immediately with lemon wedges and a generous dollop of homemade tartar sauce.
Tips
- For an extra flavor punch, add some paprika or cayenne pepper to the breadcrumb mixture.
- Serve with a side of coleslaw or crispy fries for a complete meal.
