- Haddock fillets
- 4 (6-ounce) fillets
- All-purpose flour
- 1 cup
- Eggs
- 2, beaten
- Breadcrumbs
- 1 ½ cups (preferably panko for extra crunch)
- Salt
- 1 teaspoon
- Black pepper
- ½ teaspoon
- Vegetable oil
- for frying (about ½ cup)
- Lemon wedges

Instructions
- Start by seasoning the haddock fillets with salt and pepper on both sides.
- Set up a dredging station: Place the flour in one shallow dish, the beaten eggs in another, and the breadcrumbs in a third.
- Coat each fillet in flour, shaking off any excess, then dip it into the beaten eggs, allowing the excess to drip off, and finally coat it with breadcrumbs, pressing gently to adhere.
