Servings: 4

Ingredients

Leftover idlis
4-5, cut into bite-sized pieces
Oil
3 tablespoons (for frying)
Mustard seeds
1 teaspoon
Curry leaves
10-12 leaves
Onion
1 medium, finely chopped
Green chili
1, finely chopped (adjust to taste)
Turmeric powder
1/2 teaspoon
Salt
to taste
Lemon juice
1 tablespoon
Coriander leaves
2 tablespoons, chopped (for garnish)

Instructions

  1. Begin by cutting the leftover idlis into bite-sized pieces. This will help them cook evenly and allow for maximum crispiness.
  2. In a large frying pan, heat the oil over medium heat until it shimmers.
  3. Add the mustard seeds to the hot oil and allow them to splutter, which will release their nutty flavor.
  4. Next, add the curry leaves, chopped onion, and green chili to the pan. Sauté the mixture until the onions turn translucent and fragrant.
  5. Sprinkle in the turmeric powder and salt, stirring well to combine all the spices with the onion mixture.
  6. Gently add the idli pieces to the pan, tossing them carefully to coat each piece with the spiced oil. Ensure not to break them apart.
  7. Cook for 5-7 minutes, stirring occasionally, until the idlis are crispy and golden brown on the outside.
  8. Once cooked, drizzle the lemon juice over the fried idlis and mix gently to ensure the flavor is evenly distributed.
  9. Garnish with chopped coriander leaves for a fresh touch, and serve hot as a snack or appetizer.
