Servings: 4
Ingredients
- Leftover idlis
- 4-5, cut into bite-sized pieces
- Oil
- 3 tablespoons (for frying)
- Mustard seeds
- 1 teaspoon
- Curry leaves
- 10-12 leaves
- Onion
- 1 medium, finely chopped
- Green chili
- 1, finely chopped (adjust to taste)
- Turmeric powder
- 1/2 teaspoon
- Salt
- to taste
- Lemon juice
- 1 tablespoon
- Coriander leaves
- 2 tablespoons, chopped (for garnish)
Instructions
- Begin by cutting the leftover idlis into bite-sized pieces. This will help them cook evenly and allow for maximum crispiness.
- In a large frying pan, heat the oil over medium heat until it shimmers.
- Add the mustard seeds to the hot oil and allow them to splutter, which will release their nutty flavor.
- Next, add the curry leaves, chopped onion, and green chili to the pan. Sauté the mixture until the onions turn translucent and fragrant.
- Sprinkle in the turmeric powder and salt, stirring well to combine all the spices with the onion mixture.
- Gently add the idli pieces to the pan, tossing them carefully to coat each piece with the spiced oil. Ensure not to break them apart.
- Cook for 5-7 minutes, stirring occasionally, until the idlis are crispy and golden brown on the outside.
- Once cooked, drizzle the lemon juice over the fried idlis and mix gently to ensure the flavor is evenly distributed.
- Garnish with chopped coriander leaves for a fresh touch, and serve hot as a snack or appetizer.
