- 1 dozen, shucked Fresh oysters
- 1 cup All-purpose flour
- 1 teaspoon Salt
- 1/2 teaspoon Black pepper
- 2, beaten Eggs
- 1 cup, preferably panko for extra crunch Breadcrumbs
- for frying Vegetable oil
- 1 cup (store-bought or homemade) Tartar sauce
- for serving Lemon wedges

Instructions
- Rinse the oysters in cold water, then gently pat them dry with paper towels to remove excess moisture.
- In a shallow dish, combine the all-purpose flour, salt, and black pepper to create a seasoned flour mixture.
- In another shallow dish, beat the eggs until well combined.
- In a third shallow dish, spread out the breadcrumbs evenly.
- Dredge each oyster first in the flour mixture, ensuring it's fully coated, then dip into the beaten eggs, and finally coat thoroughly with the breadcrumbs. Press gently to adhere.
- In a deep fryer or large, deep saucepan, heat vegetable oil to 375°F (190°C). You should have enough oil to submerge the oysters.
- Fry the oysters in small batches to avoid overcrowding, cooking until they are golden brown and crispy, about 2-3 minutes per batch.
- Using a slotted spoon, remove the fried oysters from the oil and drain them on paper towels.
- Serve hot with lemon wedges and a generous side of tartar sauce.
