Crispy Fried Plantains

Indulge in the delightful crunch and natural sweetness of crispy fried plantains. This popular dish, known as 'tostones' when fried green and 'maduros' when using ripe ones, hails from various Latin American and Caribbean cuisines. Ingredients

Ripe plantains
2 large, peeled and sliced diagonally
Vegetable oil
for frying
Salt
to taste
Lime juice
1 tablespoon (optional, for serving)
Garlic powder
1/2 teaspoon (optional, for extra flavor)

Instructions

  1. Peel the ripe plantains and cut them into diagonal slices, about 1/2 inch thick.
  2. In a large skillet, heat enough vegetable oil over medium heat to cover the bottom of the skillet, about 1/4 inch deep.
  3. Once the oil is hot (you can test it by dropping a small piece of plantain; it should sizzle), carefully add the plantain slices in a single layer, ensuring they are not overcrowded.
  4. Fry the plantain slices until they are golden brown, about 2-3 minutes per side.
  5. Using a slotted spoon, remove the fried plantains from the skillet and place them on a paper towel-lined plate to drain excess oil.
  6. While still hot, sprinkle with salt to taste. For an added kick, you can also sprinkle garlic powder.
  7. If desired, drizzle with lime juice before serving for a zesty finish.
